I watched the movie, Hungry for Change tonight and was reminded of all the basics in nutrition that I forget about when I get so busy with life and eat whatever is in arms length. I have been a vegetarian and even a vegan in the past, during that time I really didn’t take the time to cultivate my eating with vegetables as much as I could have, focusing on all the soy based imitations that the grocery stores stock their shelves with. I often forget how much protein is in our leafy greens, convincing myself that I need animal protein or its soy substitutes. Do I believe everyone should be a vegan? That’s not for me to say. I am choosing to endorse healthy eating though and am excited to have watched such an awesome film.
